Today is shrove Tuesday, or pancake day. Not that I need any excuse – pancakes are a weekly occurrence in this house – but it’s the justification I need for making them both for breakfast and supper.

This morning I made some simple fruit pancakes for Frida and me which are perfect for baby-led weaning.

  
If you want to make them you will need: 

  • Bananas
  • Eggs
  • Self-raising flour 
  • Blueberries (I used defrosted frozen berries)
  • Milk (we use soya or almond or coconut)

I do ratios of 1 banana to 1 egg to 1 heaped tablespoon of flour to 1 heaped tablespoon of blueberries to 1/2 cup of milk. This makes it easy to scale up or down. Simply mix and fry in butter. I mashed the blueberries slightly first so the mix was more cohesive.

  
I made the classic error of serving these with strawberries, resulting in Frida ignoring the pancakes completely and throwing herself on the strawberries. Oh well. 

  
Tonight I will make big plain crepes to fill with savoury flavours, followed by the obligatory lemon and sugar. 

In order to cook these I sat Frida in her highchair in the middle of our (tiny) kitchen. She didn’t want to play in any other room and it isn’t very safe for her to be pulling up on my legs whilst I cook so instead I showed her how I was mashing the banana (also giving her a piece to eat and talking about it), how I mixed in the ingredients, and lifted her so she could see the pancakes cooking. I hope she will enjoy cooking with me when she is a little older.
